Just a quick reply: 1. I haven't sent any reminder emails, but I feel like those that need a reminder should be reminded. 2. I wrote it in Word and formatted it roughly referencing the layout of published papers in journals (purely personal habit). The proofreading version is the one the editor re-formatted, which is not much different from my own formatting, mainly varying in font size, line spacing, numbering, etc. Personally, I don't think the formatting of the submission version is that important, it's up to personal preference as long as it's convenient for review, and the editor will reformat it during the proofreading stage.

The latest template provided by the journal's official website is a single-column template, so you should write according to the single-column format. It is likely that the journal will notify you to make further changes before publication. I am not sure if you will be asked to make the changes yourself or if the journal's publishing institution will make the changes. Writing in a single-column format will not affect the review process and publication, as the journal's own template is single-column.
